Our 2023 December release includes a 48 piece box filled with chocolate that was made using a batch of fermented beans made from pods that were rested for almost a week. It’s our first experiment with this method and the roast behaved a bit different than our standard and the lower acidity in the hots nibs was clear. The chocolate starts with a moderate cocoa base, some roasted flavors evolve into some darker red fruit and raisin-like notes that persist into the aftertaste with a slight but balanced tannic finish.
