Detailed information on El Ruisenor Fermented Washed Castillo, Colombia

Producer: Neil Guarnizo, Arnulfo Osorio, Yeison Trujillo

Location: Tarqui, Huila

Elevation: 1,900 m.a.s.l

Variety: Castillo

Process: Washed

Drying: Raised beds inside parabolic solar greenhouse dryers for 25 days

Taste description:

Orange blossom florals with notes of yellow plum, tangerine sweetness, orange zest and finishing with a floral clarity and wonderful complexity.

Process:

This washed lot was cultivated by Neil Guarnizo, Arnulfo Osorio, and Yeison Trujillo.

The micro lots that make up this community lot were all processed using slightly different washed processing. Two were treated to a double fermentation stage, first with the cherry intact, then depulped and fermented in sealed barrels and a tank, respectively. The coffees were all dried on raised beds inside parabolic solar greenhouse dryers for 25 days.

El Ruiseñor de Huila, as the municipality of Tarqui is known.

Ruisenor means “Nightingale” in Spanish, a bird renowned for its singing

ability, and speaks to this central municipality’s musical heritage. Incorporated 250 years ago, Tarqui has become known for producing exceptional musicians and for its high-quality coffee, cacao, and grapes.

One of the families we have partnered with in Tarqui is the extensive Guarnizo clan. This big, multigenerational coffee-producing family has produced some of the highest-quality micro-lots we have sourced during Colombia’s most recent main growing season. Our QC team in Colombia built this three-farmer community lot, which is a characteristic example of Tarqui’s coffee legacy, so logically, we had to include coffee from the Guarnizos.

Available in 250g jars, 50g sample packs and 1kg bags.
